Pronounced with a French K "ka", the K-Nom is a play on words for "canon" which is how French people would describe an enjoyable and easy wine. The grapes are coming from micro-parcellaire selection. The wine is vinified without SO2 and goes through a cold prefermentation before a short maceration and a concrete tank ageing. The nose offers an explosive fruit and the 15% merlot add a very enjoyable freshness to the palate. The perfect ally for an evening with friends.
Emmanuel Rybinski is definitely one of the most up and coming winemakers in the region. The 14 hectares vineyards is certified organic and biodynamic and located on an iron based plateau at the south of the Cahors appellation. This family business is ran with great care and dedication in order to produce world class wines. The vast majorities of the vines carries Malbec grapes although Emmanuel is farming a few white varieties and some Merlot vines.
