The Valençay has a thin gey felted natural rind. Its dough is firm, sometimes creamy under the rind and homogeneous with the colour of snow. On the nose, it smells undergowth and straw, whereas on the palate the taste is more lactic with fresh nut aromas.
Raw Milk - Goat - Made in the Berry region in France, this snow colour cheese used to have a pointed shape like a pyrmid, but after the unsuccessful expedition of Napoleon in Egypt, the former french emperor could not stand the shape of this cheese and cut off its top with his sword. The Valençay has since then always been produced with a flattened top.
