The Ossau Iraty's rind has a powerful cave odour, the colour varies from orangey to greyish. The dough is sweet and has a firm texture, a delicate scent of sheep as well as nuts.
The name comes from the production area that includes two neighbouring provinces of the Pyrenees region: the mountainous Ossau Valley and Iraty, a forest area. There are three kinds of Ossau Iraty: the farmer one, the dairy one and the summer one.
