La Sainte Maure de Touraine has blue fluffy flora and grey ashes which cover the rind. The dough is white, dense, homogeneous, firm and sometimes creamy on the outside under the rind. The scents of the cheese are similar to the humid caves and undergrowth. On the palate it is milky, goaty and tastes of fresh nuts.
