The texture is dense and a bit hard. The taste will be a bit sharp, acidic with a lot of authentic flavours from the South of France. Can be paired with a cherry jam ' Cerises noires de Bale' by La Cours d' Orgeres for example.
Cabasses de Millau is a semi hard cheese made with ewe milk cheese. The weight is around 650 g per piece. Made in Aveyron in Midi Pyrennées, the cheese has a rich typicity from this terroir.
