This Blanc de Blancs, Extra-Brut, is produced without any additional chemicals. Only the juice from the first press is used for this champagne. Vinification is 100% done in oak barrels. Best enjoyed between 12 and 13 degrees. With a pale golden robe, the cuvee has a dominant floral nose. The palate on the other hand is full of minerality, citrusy and with lemongrass aromas.
The Doyard family can be rooted in Champagne back in the 17th century. Yannick Doyard takes over in 1979 and brings the domaine on the front scene of independent small growers. The vineyard is about 10 hectares of vines in Vertus and the Grand Cru villages of Le Mesnil, Cramant, Oger, Avize and Ay.
