This duck stock is prepared in accordance with the rules of culinary art. For a quick sauce that goes well with the duck, brown the shallots in duck fat, deglaze with red wine, add duck stock and reduce by half. Add cream and let thicken.
Maison Samaran was created in 1968, in Toulouse, located in the south western region of France. It is well known all throughout France for its specialty in cassoulet and duck confit. The products are always cooked in an artisanal way and the different recipes for pâtés, confits, terrines, cassoulet with duck confit ... are inspired by regional cuisine, the birthplace of the family.
