Rillettes are eaten cold, spread out on some toasted bread for aperitif.


Rillettes d’Oie is made from goose meat and a bit of pork fat. The meat is cooked slowly at low temperature in the pork fat. The flesh easily breaks away and this is what gives the ‘rillettes’. The fat comes to the surface once the preparation cools down.
