From south west of France, the Bethmale is not that famous very famous outside the borders of its home region. It can be produced with only one type or a mix of milks. The paste is straw yellow colour, and supple with a lot of small holes. On the palate, the taste is aromatic, slightly milky and delicate.


Raw Milk – Cow – This cheese takes its name from the from the famous Calisson candy in Aix en Provence because of its shape.
