Grey to brown colour rough rind with a very dense paste, the mimolette is defined by its orange colour made with the natural colorant Annato. Its texture at this affinage step will be firm and brittle. Its flavour will be caramelised, with hints of roasted hazelnuts and slight salt.


Pasteurized Milk – Cow – Our Mimolette from Les Trois Moulins is ranked “extra old” because its maturation time of over 18 months. The mimolette can get two others names: Boule de Lille and Mimolette Etuvee.
